How to make beef stroganoff with sour cream in a frying pan? Prepare the necessary products. Both the cooking time and the taste of the finished dish will depend on the quality of the meat. To make the meat softer, juicier and cook faster, it is better to choose young beef (I took veal). Tenderloin or filet work well. Choose sour cream of any fat content. Instead of olive oil, you can use any vegetable oil without a distinct odor.

Wash the meat and dry it well. Cut the meat across the grain into pieces no thicker than 1 cm. Why do you need to cut beef across the grain? This will disrupt the fiber structure, and the finished meat will be softer. The cooking time will also be reduced. To further soften the meat fibers, lightly beat the cut pieces with a hammer on both sides.

Cut the prepared pieces of meat into thin strips.

Cut the pre-peeled onions into small cubes.

Heat 2 types of oil (butter and olive) in a frying pan.

Place the prepared meat in the pan. Fry the meat over moderately high heat, stirring occasionally, until lightly browned. The resulting crust will retain the meat juice inside the pieces, and the meat will be more juicy.

Sprinkle the meat pieces evenly with flour and stir. Pour hot water into the meat, add salt, and stir again. Simmer the beef stroganoff over moderate heat, covered, for about 20 minutes.
