Basic:

Salt 1 g
Sugar 0.5 cup
Wheat flour 2 cup
Vegetable oil 0.5 cup
Chicken eggs 1 pc
Soda 0.3 tsp
Kefir 0.5 cup

How to make dough without butter? Prepare your food. It’s better to take thicker kefir, I have a fat content of 3.2%. Take it out of the refrigerator in advance so that it comes to room temperature. Pour kefir into a large bowl. Add sugar (you can change the amount of sugar depending on what you are baking), a pinch of salt to balance the taste, and soda. Mix the ingredients with a whisk.

Pour vegetable oil into a bowl with kefir and stir.

In a separate bowl, whisk the chicken egg until the egg white is completely dispersed. Pour the egg mixture into a bowl of liquid, stir and start adding the sifted wheat flour. Flour must be sifted to avoid foreign objects and debris that may be in the flour from getting into the dough, and to saturate this product with oxygen, which, in turn, will make products made from it softer and airier.

Add flour in small portions, stirring the ingredients with a spoon until the dough begins to come together into one lump. Then gather the dough into a ball with your hands on a floured work surface. You may need a little more or less flour than the amount stated in the recipe, depending on the condition of the dough.

You should get a dense, stiff dough, but you don’t need to knead it for too long so that it doesn’t become hard. This dough, unlike classic shortbread dough made with butter or margarine, does not require time to cool and keep in the refrigerator. You can immediately proceed to rolling out and preparing baked goods from it. This dough can be used to make cookies, pies, cakes and other products.
