Shrimp and Pomegranate Salad with Grapefruit Twist

Original, refined, with a bomb dressing — a masterpiece! Salad with shrimp and pomegranate will captivate you with its unusual composition and pleasant, memorable taste. The main secret is the presence of grapefruit in the composition. They add sourness, pleasant bitterness and juiciness to the dish. You can replace grapefruit with orange if you wish.

Recipe instructions

Step 1

Step 1
How to make shrimp and pomegranate salad? First, prepare the necessary ingredients for the dressing. It will later become a marinade for shrimp. I used extra virgin olive oil, but you can use any vegetable oil you like. You can replace red wine vinegar with white, apple or regular table vinegar.

Step 2

Step 2
Wash the dill, dry and finely chop. You can replace dill with parsley, cilantro, basil or other herbs to taste.

Step 3

Step 3
Remove the zest from the grapefruit using a grater. Then cut the fruit in half and squeeze out the juice. If you have a large fruit, you can use half for dressing and cut the other half into a salad. Below the recipe, see information on how to properly zest citrus fruits.

Step 4

Step 4
In a bowl, mix vegetable oil, wine vinegar, powdered sugar, dill, grated grapefruit zest and juice, salt and pepper.

Step 5

Step 5
Now prepare the rest of the salad ingredients. You can add or replace the vegetable part to your liking. You can replace king prawns with any other type of shrimp to taste, and also add other seafood, such as mussels, squid, etc.

Step 6

Step 6
Pour half the dressing over the peeled shrimp and leave to marinate for 10-15 minutes.

Step 7

Step 7
Peel the grapefruit. Cut the pulp into segments.

Step 8

Step 8
Wash the cucumber, dry it and cut into thin slices. The skin, if it is not rough, damaged or bitter, does not need to be cut off.

Step 9

Step 9
Cut the avocado in half and remove the pit. Peel each half and cut into slices. I cut it into semicircles — this makes the avocado look more beautiful. It is important to peel the avocados in this order. After all, avocado contains essential oils and after removing the peel the fruit becomes slippery. You may cut yourself when cutting it in half.

Step 10

Step 10
Wash the lettuce leaves and tear them into small pieces with your hands. You can take a ready-made salad mixture to your liking.

Step 11

Step 11
Place lettuce, avocado, cucumber, grapefruit slices and marinated shrimp on a plate. Pour the second half of the dressing over the salad. Sprinkle the salad with pomegranate seeds and serve. Bon appetit!
