Incredibly fresh vitamin salad, and prepared in 2 counts! Try! I couldn’t help but prepare this salad when I came across fresh green vitamin arugula! There were fresh pine nuts in stock, very fragrant, unlike any other... The rest of the ingredients are the fruit of my imagination! It turned out really delicious!

Mozzarella 125 g
Lemon juice 1 tbsp

How to make a salad with arugula, pine nuts, mozzarella cheese, tomatoes and shrimp? To begin, prepare the necessary ingredients according to the list. You can use regular or cherry tomatoes. I have small Baku tomatoes. They are slightly larger than cherry tomatoes, but smaller than regular tomatoes. You can add or replace the vegetable part to your liking.

Wash the tomatoes and cut into slices. If you have cherry tomatoes, cut them in half. You need tomatoes that are firm but juicy. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Remove the head and shell from the shrimp. If the shrimp are frozen, scald them with boiling water. You can replace king prawns with any other type of shrimp to taste, and also add other seafood, such as mussels, squid, etc.

Remove the mozzarella from the brine and dry. If the mozzarella is one large ball, cut it into thin slices. Instead of mozzarella, you can use any other cheese to your taste: hard cheeses such as Russian or Gouda, soft cheeses such as curd, processed or feta. Wash and dry the arugula. Tear large leaves with your hands. Instead of arugula, you can use other greens to taste. A ready-made mixture of lettuce leaves, basil, iceberg, etc. works well.

In a bowl, mix olive oil, lemon juice, mustard, salt and pepper. Beat everything with a fork until smooth. You can replace the grainy mustard with regular Russian or Dijon mustard. I used extra virgin olive oil, but you can use any vegetable oil you like. If you wish, you can add a little honey, apple cider vinegar or wine vinegar to the dressing.

Combine tomatoes, shrimp, arugula and mozzarella in a salad bowl. Pour over the dressing and stir.
