Ingredients (10 portions)

Basic:

Cottage cheese 800 g
Sugar 350 g
Butter 150 g
Chicken eggs 6 pc
Potato 4 pc
Raisin 100 g
Orange zest 1 tbsp

For fondant:

Sugar 300 g
Butter 1 tbsp
Water 0.5 cup
Chocolate 50 g
Vinegar 1 tbsp

Recipe instructions

Cottage cheese and boiled potatoes need to be ground twice in a meat grinder (I used a blender to grind them to a uniform, soft consistency). Add one yolk at a time, constantly grinding. Add soft butter and sugar, constantly rubbing to form a fluffy mass.

Add washed and dried raisins and orange zest.

Gently mix with the whipped whites into a fluffy foam.

Place in an oblong mold (I used 13x22 cm, lined with baking paper. Bake for 35-40 minutes at 180*C. Cool. Remove from the mold when cold.

Pour fudge on top (cook it from sugar, vinegar and water, syrup. Grind with chocolate and butter) I have fudge from half the portion.

Before serving, be sure to keep the cheesecake in a cool place for at least 6-8 hours. During this time, it ripens and acquires a different structure.
