How to make crispy homemade puff pastry envelopes with cheese and herbs? Very simple! To begin, prepare the necessary ingredients according to the list. You can replace Suluguni with any other cheese: unbrined mozzarella for pizza, regular Russian, etc. The main thing is that the cheese is tasty and melts well. You can also replace or add greens to your liking. Cilantro, green onions, etc. will do.

Now start preparing the dough. I have frozen puff pastry in square sheets. The dough must be defrosted on the bottom shelf of the refrigerator.

Now form the envelopes. Bring the edges of the dough towards the center and pinch well. From one plate I made 9 small envelopes. And from the second plate I decided to make larger envelopes and more filling, so I only got 4 pieces. Large envelopes made from a thicker layer of dough are more convenient to form and they do not deform so much during baking.

Transfer the pieces to a parchment-lined baking sheet. Brush the tops of the envelopes with egg white and sprinkle with sesame seeds. Bake in an oven preheated to 180°C for 20-30 minutes until golden brown. The exact time depends on your oven.
