Orange-Infused Cottage Cheese Muffins

A quick and delicious dessert for breakfast or a friendly tea party. I like cottage cheese muffins, they taste more tender than regular ones. The filling will appeal to orange lovers, I am just a fan. Iʼm especially pleased that it takes very little time to prepare.

Basic:

Sugar 200 g
Wheat flour 180 g
Butter 120 g
Oranges 1 pc
Baking powder 0.5 tsp
Chicken eggs 2 pc
Cottage cheese 250 g

Recipe instructions

Step 1

Step 1
The first step is to melt the butter so that it has time to cool a little. You also need to grate the orange zest on a fine grater in advance.

Step 2

Step 2
Beat eggs with sugar.

Step 3

Step 3
Add cottage cheese, melted butter and orange zest. Mix well.

Step 4

Step 4
Sift the flour mixed with baking powder. It is better to do this in 2-3 approaches, adding flour in parts. After kneading the dough, put it aside and start filling.

Step 5

Step 5
You need to disassemble the orange into slices and clear them of films. Cut the slices into 2-3 parts, the pieces should not be too large.

Step 6

Step 6
To make it easier to remove the muffins from the mold, you can grease it with a piece of cold butter and sprinkle with flour. First, fill each mold halfway: place about one tablespoon of dough. Then place orange slices on top. And finally, “cover” the fruit slices with the remaining dough.

Step 7

Step 7
Preheat the oven to 180 degrees. Baking time is 20-30 minutes, depending on the size of the cupcakes and the oven. The smaller the cupcakes, the faster they will bake. In any case, it is better to check the readiness of the muffins with a knife or toothpick.
