Apple-Kefir Pancakes: A Morning Delight

Lush, fragrant, homemade, with a pleasant surprise inside! Pancakes filled with kefir will delight your family early in the morning. They are prepared quickly, and the fillings for it can be replaced to suit your taste. Anything will do: fruits, berries, chocolate, dried fruits, cream, boiled condensed milk. I cook mine with apples.

Ingredients (6 portions)

Basic:

Sugar 2 tsp
Apples 150 g
Wheat flour (You may need a little more or less flour depending on its quality) 1.5 cup
Salt 0.5 tsp
Vanillin 0.3 g
Vegetable oil (1 table. l. into the dough and about 4 table. l. for frying) 5 tbsp
Chicken eggs 1 pc
Soda 0.5 tsp
Kefir (or curdled milk) 250 ml
Ground cinnamon 0.3 tsp

How to make pancakes with filling? Prepare the necessary ingredients. Wash and dry the apples well. You can use kefir of any fat content, I used thick kefir.

Mix salt and sugar in a deep bowl.

Add ground cinnamon, vanilla, beat in a raw egg.

Mix well with a fork or spoon.

Pour in warm kefir (kefir temperature should be about 30-40 degrees) and vegetable oil, stir again.

Add baking soda and stir. The mass may become more voluminous, this is how it should be.

Add flour in small portions, as... You may not need all of it or, conversely, a little more — look at the consistency of the dough, it should be like thick sour cream.

Our pancake dough is ready! Let it sit for a while while we work on the apples.

I donʼt peel the apples, but you can. Cut the apples into slices, removing the core. I cut it thin, but when I want the apple to taste good, I cut it thicker.

Place 1 tablespoonful in a heated frying pan with vegetable oil. l. test. You can try to make the pancakes more round and even. To do this, drain the dough from the spoon, turning it perpendicular to the pan.

Place 1 piece of apple on each pancake.

Pour a small amount of batter onto the apple. I like this method of adding filling to pancakes because all the filling remains inside and does not burn when frying. Fry the pancakes until golden brown over medium heat — they usually fry quite quickly, so donʼt go anywhere and get ready to flip.

Turn the pancakes over and cook them on the other side.
