Ingredients (9 portions)

For the biscuit:

Lemon juice 1 tbsp
Wheat flour 160 g
Cocoa 3 tbsp
Chicken eggs 2 pc
Soda 1 tsp
Condensed milk 1 jar

For cream:

Walnuts 200 g
Sour cream 600 g
Prunes 400 g

For the glaze:

Sugar 3 tbsp
Butter 50 g
Milk 3 tbsp
Cocoa 2 tbsp

How to bake a sponge cake for a chocolate cake with walnuts? Prepare all the necessary ingredients. Chicken eggs should be at room temperature, so remove them from the refrigerator in advance. For making biscuits, take condensed milk of high quality according to GOST.

Pour condensed milk into a suitable container. Beat two eggs and mix with a mixer at medium speed until smooth.

Add cocoa powder by sifting it through a strainer. Beat again with a mixer until smooth. Be sure to sift the flour to saturate it with oxygen. Pour into the dough in parts, stirring with a silicone spatula. Since flour differs in its properties, you may need a little more or less than indicated. Focus on your desired consistency.

Add baking soda slaked with lemon juice. Gently mix the dough again. The consistency of the dough should be like thick sour cream.

Take a round cake pan with a diameter of 18-21 cm. Line the bottom with high-quality parchment paper. Grease the sides with a piece of butter.

Pour in half the dough. Bake in an oven preheated to 180 degrees for 25-30 minutes. Please note that everyoneʼs oven is different, so baking times may vary. Check the readiness of the biscuit with a wooden skewer. Pierce the biscuit, if the skewer comes out dry, without sticking dough, then it’s ready. Bake a second sponge cake as well.

How to make cream for chocolate cake with walnuts? Prepare the following ingredients. Use high fat sour cream.

Place the sour cream on cheesecloth folded in four. We put it in a colander, which we place on the pan. Carefully cover the sour cream with the ends of the gauze, place a flat plate on top, and some weight on it (you can use a bottle of water). Leave the sour cream to settle in the cold for several hours (at least 2 hours).

Pour boiling water over prunes (I used dried ones) and leave for 1 hour. Then drain the water and dry the prunes with paper towels. Cut it into small pieces.

Grind the walnuts in a blender.

Transfer the settled sour cream into a suitable sized container. Add sugar and beat with a mixer until the sugar crystals dissolve.

How to make chocolate walnut cake frosting? Prepare your ingredients. I used brown sugar, but you can use regular sugar. Cocoa can be replaced with dark chocolate.

Start assembling the chocolate walnut cake. Remove the biscuit cakes from the refrigerator, remove the film and cut each into 2 parts. You should get 4 cakes. If you baked one sponge cake, cut it into three layers.

Place the first cake layer on a cake tray or plate, brush it with cream (about 2 tablespoons), and smooth it over the entire surface of the cake layer. If desired, each cake can be soaked in pre-brewed aromatic coffee, into which you can add a teaspoon of cognac or liqueur for flavor.

Cover with the second cake layer, brush with cream, then place the third cake layer. Place the fourth cake layer on top with a nice, even cap. Grease the sides of the cake with sour cream as well.
