Ingredients (8 portions)

Basic:

Butter 80 g
Bananas (Very ripe, if small — 3 pcs.) 2 pc
Egg yolks 2 pc
Powdered sugar (Or 70g sugar /+-/, taste and add to taste.) 3 tbsp
Lemons (zest and juice of 1 lemon) 1 pc
Mango (If desired or available, it adds a sweetish tartness.) 40 g

Recipe instructions

Prepare food. It is important that the bananas and mangoes are very ripe.

Melt the butter and cool.

Mash bananas and mangoes thoroughly, add the yellow part of the zest and the juice of one lemon, mix.

Grind the yolks with powdered sugar, pour them into the banana mixture, stir and let stand for 20 — 30 minutes.

Then pour into a saucepan and cook in a water bath or very low heat, stirring constantly. Until the mass thickens slightly, to a temperature of 82 degrees/about 10 minutes /. It is important not to let it boil, otherwise the yolks will curdle.

Let it cool slightly and pour in the cooled melted butter, mix thoroughly until smooth.

Cover with film in contact, let cool at room temperature, then put in the refrigerator.
