Potato and Mushroom Pancakes

Ingredients (4 portions)

For the test::

Eggs 2 pc
Milk 350 ml
Water 150 ml
Sugar 3 tbsp
Wheat flour 250 g
Vegetable oil 3 tbsp
Salt to taste

For filling::

Dried mushrooms 80 g
Potato 700 g
Bulb onions 1 pc
Milk 150 g
Vegetable oil 20 g
Salt to taste

How to make pancakes with potatoes and mushrooms? Prepare all the necessary ingredients. Peel the potatoes and rinse them to remove dirt. You can use any mushrooms for the filling. Dried mushrooms will be the most flavorful. They need to be poured with boiling water and left to stand for 20-30 minutes. Then rinse well and chop finely.

To prepare pancake dough, mix eggs with sugar and salt.

Add milk and vegetable oil. Add flour and mix it into the dough. At this stage the dough will be thick.

Pour in boiling water to brew the flour. Thanks to this, the pancake dough will become more elastic, which means the pancakes will tear less.

You may need a little less or more flour. Adjust the thickness of the dough. It should be quite liquid. It is the liquid dough that will make thin pancakes.

Grease a hot pancake pan with oil and pour in some batter.

Bake pancakes. Stack them on top of each other and cover with a lid to prevent them from drying out.

While preparing the pancakes, prepare the filling. Boil potatoes until soft. Add some salt. Then drain the water, mash the potatoes with a potato masher, adding warm milk.

Peel the onion and chop finely. Fry the onions and mushrooms over low heat for 7-10 minutes. All the moisture will evaporate from the mushrooms and they will begin to brown a little.

Mix mushrooms with mashed potatoes.

Place some potato filling on the pancake.
