Recipe instructions

Step 1

Step 1
How to make kefir flatbreads with cheese and herbs in a frying pan? Prepare the necessary ingredients for the dough. Remove the kefir from the refrigerator in advance so that it is not cold, but at approximately room temperature.

Step 2

Step 2
Add soda to kefir and stir. Leave the kefir for 10 minutes. The surface of the kefir will become covered with bubbles as a result of the reaction of soda with lactic acid. Read about all the nuances of working with soda in a separate article, link at the end of the recipe.

Step 3

Step 3
In a bowl, beat the egg and salt until smooth.

Step 4

Step 4
Pour in kefir and soda, stir.

Step 5

Step 5
Add vegetable oil, it will give the dough elasticity.

Step 6

Step 6
Add about 3/4 of the sifted flour and mix the dough with a spoon. Do not add all the flour at once; you may need less. You can read more about flour and its properties in a separate article, link at the end of the recipe. Add the rest of the flour gradually, stirring the dough. Focus on its consistency. The dough should not be too hard.

Step 7

Step 7
Knead a soft, tender, homogeneous dough. Wrap it in cling film and leave it on the counter for 20-30 minutes.

Step 8

Step 8
Prepare the filling. For it, you can take any types of hard or soft cheese (Suluguni, Adyghe, feta cheese). The main thing is that the cheese is tasty, of high quality, without adding dairy fats. You can adjust the proportions of cheese to your taste.

Step 9

Step 9
Grate the cheese on a coarse grater.

Step 10

Step 10
Wash the parsley and dill and dry well. Finely chop the greens.

Step 11

Step 11
Combine grated cheese and herbs, mix well.

Step 12

Step 12
The dough “rested”, became more pliable, elastic and pleasant to work with. Divide the dough into equal parts. I divided it into 7 parts. If you want larger cakes, divide the dough into 5-6 parts.

Step 13

Step 13
Also divide the filling into portions according to the number of cakes.

Step 14

Step 14
Roll each piece of dough into a round cake.

Step 15

Step 15
Place the filling in the middle of the flatbread.

Step 16

Step 16
Lift the edges of the dough over the filling and press together well.

Step 17

Step 17
Lightly press the dough with the filling with your palm and roll it out carefully so that the dough does not tear.

Step 18

Step 18
Fry the flatbread in a dry, heated frying pan until golden brown. The flatbread is fried quickly, about 2 minutes on one side. I fried it over medium heat. But focus on your stove and adjust the heating, taking into account the features of its operation. Read about how to choose the perfect frying pan by following the link at the end of the recipe.

Step 19

Step 19
Turn the flatbread over to the other side and fry until golden brown. During frying, the flatbread may swell from the steam accumulated inside. After cooling it will settle. While one tortilla is frying, form the next one. The cooking process will be continuous and the pan will heat evenly. Fry all the tortillas in this manner.

Step 20

Step 20
Immediately after cooking, brush the top of the flatbread with butter.

Step 21

Step 21
Place the finished flatbreads with cheese and herbs on top of each other to keep them warm longer and serve immediately. Bon appetit!
