Orange zest 1 tbsp
Wheat flour 150 g
Eggs 1 pc
Soda 0.5 tsp
Cottage cheese (9%) 250 g
Vanilla sugar 1 tsp
Kefir 150 ml

Beat the egg into a convenient deep bowl, add sugar and vanilla sugar and salt to balance the taste. Whisk until all ingredients are combined and light foam forms. Vanilla sugar can be replaced with vanillin, then it will need to be taken on the tip of a knife, since a larger amount will add bitterness to the finished dish.

In a separate bowl, mash the cottage cheese with a fork. Pour the egg mixture into it and stir. If your cottage cheese is very coarse, you can rub it through a sieve or punch it with an immersion blender.

Pour in kefir at room temperature, add orange zest and stir.

Sift the flour and soda through a sieve or using a special mug and pour into a bowl. Stir. You may need a little less or a little more flour, depending on the consistency of the dough.
