Basic:

Egg yolks 1 pc

For dough:

Salt 2 g
Sugar 150 g
Wheat flour 300 g
Butter 180 g
Sour cream 1 cup
Baking powder 0.5 tsp
Chicken eggs 2 pc

For filling:

Sugar 50 g
Butter 50 g
Walnuts 150 g

How to bake a roll with walnuts? Prepare all the necessary ingredients. How to knead butter dough? All ingredients stored in the refrigerator must be removed in advance (2-3 hours before) so that they are at room temperature. Take a deep bowl, place sour cream and softened butter in it.

Add sugar and a pinch of salt to balance the flavor. Mix the ingredients using a hand whisk or mixer.

Beat two eggs into a bowl and mix the ingredients again until smooth. Wash the eggs first in warm water and soda, as there may be harmful bacteria on their surface.

Sift the wheat flour through a sieve, add baking powder to the flour, mix the dry ingredients and pour them into a bowl with the liquid mixture. Do not add all the flour at once, but add it in small portions, stirring the mixture. You should get a thick dough that will easily come together into a ball. You may need less or more flour, depending on the desired consistency of the dough.

Then place the dough piece on a floured work surface and knead into an elastic, smooth dough. You cannot knead this dough for a long time, otherwise it may become hard and tasteless after baking. The main task is to gather the dough into a pliable, dense ball. Wrap the dough in cling film and put it in the refrigerator for half an hour.

How to make the filling for a roll with walnuts in the oven? Take walnuts, wash and dry in the microwave or in a dry frying pan.

Grind the nuts to coarse crumbs. This can be done in a blender, coffee grinder or using a regular rolling pin. Add softened butter, sugar, and a pinch of vanilla, if desired, to a bowl with chopped walnuts. Grind the ingredients with a spoon or clean hands until crumbs of uniform consistency are formed and the nut filling for the roll is ready.

Remove the finished dough from the refrigerator. You can divide it into three parts and prepare three small rolls or one large one at your discretion. Roll out the dough into a thin layer about 0.5 centimeters thick.
