How to make walnut ice cream? Prepare your food. To make ice cream, you can use cream of any fat content or 6% milk. The calorie content of the dish will depend on which product you choose, so keep this in mind. If you have already peeled the nuts, then heat them a little in a dry frying pan — they will become more fragrant.

First of all, chop the nuts in any way. I pounded them in a mortar, you can chop them with a knife or spin them in a blender. Choose the degree of grinding yourself. You can make very fine crumbs, or you can leave larger pieces that will be felt in the ice cream.

Pour the cream (or milk) into a thick-bottomed saucepan and bring to a boil. Add nuts to hot milk, stir and leave to cool.

Add powdered sugar to the egg yolks and whisk them thoroughly until smooth.

Pour some cooled cream into the yolk mixture and stir. Then pour the resulting mixture into the saucepan with the cream and mix well until smooth. This way it will be easier to mix the yolks with cream, which have different consistencies.

Boil the resulting mixture over low heat until thickened. Cook with constant stirring to prevent the yolks from curdling. When the first bubbles appear, remove the pan from the heat. If you are not confident in your abilities or your dishes, then cook the cream mixture in a water bath. Cool the mixture completely.

Pour the future ice cream into a suitable container and put it in the freezer.

After 45 minutes, remove the container and stir the mixture with a spoon. This is done so that the ice cream freezes evenly and ice does not form in it. Place the container back in the freezer.

Next, take out the ice cream every 30 minutes for 4 hours and stir the freezing mass. After that, leave it in the freezer for 8 hours.
