How to make cottage cheese pie with berries? Prepare your food. Choose high-quality, natural butter, sour cream and cottage cheese, without vegetable fats. Remove the butter from the refrigerator in advance so that it becomes soft. Sift the flour through a sieve to saturate it with oxygen — then the dough will turn out fluffier. The fat content of cottage cheese and sour cream does not matter much. But the cottage cheese should be soft, without grains. Take corn starch.

First prepare the dough. How to make the dough? Place soft butter, sugar and egg in a bowl. Stir them with a wooden spatula.

Then gradually add flour and knead the dough. At first it is convenient to stir with the same wooden spatula, and then you can continue with your hands. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. As soon as the dough stops sticking to your hands, do not add more flour.

A 22-24 cm springform pan is suitable for the pie. Cover the bottom with cooking paper and clamp it with a ring. Spread the finished dough over the bottom of the pan, making edges on the sides. It is convenient to do this by cutting thin pieces from the dough and lining the bottom and sides with them.

Prepare the filling. How to make the filling? Combine eggs with sugar. Shake them a little with a whisk.

Then add cottage cheese and sour cream. Add starch. Mix all ingredients. If the cottage cheese you get is still grainy, then punch the filling with a blender, so it will turn out more homogeneous and tender.

Pour the finished filling into the mold onto the prepared dough. Sprinkle berries over the entire surface. I use fresh raspberries and blackcurrants. In winter, you can use frozen berries for this pie. Place the pie in the oven, preheated to 180 degrees, for 40-50 minutes. Be guided by your oven. The dough should be golden and the filling should be stable.
