Chicken Mushroom Cheese Soup

A very aromatic and satisfying soup and at the same time low in calories! Mushroom soup with chicken and processed cheese has a unique mushroom smell and taste that is unlikely to leave anyone indifferent! Champignons can be replaced with any other mushrooms, and you can use different cheese.

Ingredients (8 portions)

Basic:

Onion 2 pc
Garlic (for croutons) to taste
Salt to taste
Butter 1.5 tbsp
Water 1.5 l
Pepper to taste
Potato (big) 1 pc
Carrot 2 pc
Champignon 200 g
Greenery (dill, parsley, cilantro) to taste
Chicken fillet 300 g
Processed cheese (2 pieces "friendship"/creamy) 180 g
White mushrooms (Any wild mushrooms, or only champignons) 100 g
Allspice 2 pc

How to cook mushroom soup with chicken, champignons and processed cheese? Prepare chicken broth: Pour cold water over the washed fillet, remove the foam after boiling, add salt, add carrots, onions, allspice — reduce heat to low and cook for 30 — 50 minutes.

Cut the onion into half rings.

Carrots in cubes.

Diced potatoes.

Prepare the mushrooms: Wash the champignons, peel them, cut them into 4 parts /if large, then into slices/. Thaw frozen wild mushrooms, soak dried ones in water, and boil fresh ones in water for 10 minutes.

Melt butter in a thick-bottomed saucepan, fry onions and carrots. Add mushrooms, stir and fry for 5 — 7 minutes.

Pour the prepared broth into the vegetables and mushrooms, add the potatoes and cook over low heat until they are ready. Chop the meat from the broth and add it to the almost finished soup. Grate the processed cheeses /pre-hold in the freezer for 10 minutes/and add them to the soup, stirring constantly until they just dissolve. Turn off the stove. Add pepper and herbs to the soup and let stand.

Prepare garlic croutons /optional/: Fry the loaf or baguette with a very small amount of vegetable oil. Soak a clove of garlic in salt and rub the crouton on both sides. And thatʼs it — you can start a delicious meal. Soup with chicken, mushrooms and melted cheese is ready! Bon appetit !
