Refreshing Cucumber Mint Soup

Light, refreshing, affordable, quick and easy. Cucumber soup is a bit like okroshka made with kefir. It is moderately spicy due to green onions, with refreshing mint notes and a pleasant lemon sourness. Sour cream smoothes out all these bright flavors, combining them into a harmonious composition.

Ingredients (2 portions)

Basic:

Olive oil 2 tsp
Salt to taste
Ground hot pepper to taste
Lemon juice 1 tbsp
Water 120 ml
Sour cream 100 g
Green onions 20 g
cucumbers 140 g
Mint 10 g
Herbal mixture (Oregano and green basil. Fresh is better.) to taste

How to make cucumber soup? Prepare all the necessary ingredients. Pour water at room temperature into the blender bowl and add sour cream.

Rinse the green onion feathers under running water and shake off the water. Cut the greens into large pieces so that they grind faster and better in the blender. I added eight long onions to two servings of soup. The amount of onion can be varied depending on your preference for the spiciness of the future soup.

Rinse fresh mint. You will only need leaves, without hard stems. Add mint to blender bowl. Add lemon juice there too.

Beat all ingredients with a blender for three minutes, working in pulse mode at medium speed.

Wash the cucumbers and cut into slices. Place them in a blender bowl. The peel of cucumbers can be cut off, but this is optional. Place oregano and green basil in a blender bowl (I used dried herbs, but fresh would be ideal). Add some salt. Whisk the soup again for a couple of minutes until smooth. Before serving, garnish the soup with thin slices of cucumber, season with olive oil and pepper to taste. Bon appetit!
