Basic:

Tomatoes (small) 2 pc
Olive oil 3 tbsp
Salt to taste
Lemon juice 1 tbsp
Sour cream 2 tbsp
Bulb onions (red, large) 1 pc
bell pepper 1 pc
Green beans 90 g
Olives (Seedless) 75 g
Basil (dry) 1 tsp
Herbal mixture (I have Italian (1 tsp.) to taste
Pink salmon 450 g

How to bake pink salmon with vegetables juicy and soft? Prepare the necessary ingredients. I took fish fillets that had been skinned and boned in advance; you can prepare steaks. Take any vegetables, preferably different colors, so that the dish is bright. Olive oil can be replaced with any vegetable oil. Use herbs and spices as desired and to taste. If the beans are frozen, defrost them at room temperature in advance.

Salt pink salmon fillet on both sides and sprinkle with basil. Drizzle lemon juice over fillets and drizzle with some olive oil. Cover the fish and leave to marinate for 30-40 minutes. The marinating process will make pink salmon more juicy and tasty.

Wash the bell pepper and dry it. Remove the seeds and stem, cut the pepper into large strips.

Cut the pre-peeled red onion into thin half rings. If the onions are small, cut into rings. You can use another form of cutting vegetables, for example, into cubes. But it is better not to make it too small, so that during baking the vegetable pieces do not overcook and retain their shape well.

In a suitable-sized and convenient bowl, combine the prepared onions and peppers, young green beans and olives. Drizzle the remaining olive oil over the vegetables, add herbs and mix well.

Place fish fillets tightly together on the bottom of the baking dish.

Top the fish with sour cream. This will give it softness.

Wash the tomatoes and dry them. Cut the tomatoes into slices. Choose fleshy, thick-walled fruits so that they do not turn into a shapeless mass during baking. Place tomato slices on the fish fillet.

Spread the vegetable mixture evenly on top. Cover the pan with foil to prevent the vegetables from drying out.

Bake the dish in an oven preheated to 180C for about 30 minutes. 10 minutes before cooking, remove the foil. Determine the cooking time based on the operating characteristics of your equipment.
