Recipe instructions

Step 1

Step 1
How to bake pollock with cheese in the oven? First, prepare the ingredients required from the list. You can take pollock fresh or frozen. Frozen fish must first be defrosted by transferring it from the freezer to the bottom shelf of the refrigerator. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. Instead of whole fish, you can use boneless, skin-on fillets or briquettes pressed from the fillets.

Step 2

Step 2
Clean the fish from entrails and scales, remove the fins and rinse well. Cut into portions.

Step 3

Step 3
Sprinkle the fish with salt and a mixture of ground pepper.

Step 4

Step 4
While the fish is marinating, make the sauce. Milk is suitable for any fat content. If you want more sauce, use more ingredients in appropriate proportions.

Step 5

Step 5
Grate the cheese on a coarse grater. Any cheese is suitable for this dish — hard, semi-hard. The main thing is that it is tasty, of high quality, without milk fat substitutes, and melts well. I have regular Russian cheese. For information on different types of cheeses, see the article at the end of this recipe under the steps.

Step 6

Step 6
Melt the butter in a frying pan over low heat. Read about how to choose the ideal frying pan, as well as how to choose the right oil, in separate articles, links at the end of the recipe.

Step 7

Step 7
Add flour and stir quickly until smooth. Stirring constantly, pour in warm milk. Bring the sauce to a boil and simmer over low heat until thickened.

Step 8

Step 8
Add half the grated cheese and fish spices to the sauce. Stir thoroughly until the cheese melts. Remove the pan from the heat. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish.

Step 9

Step 9
Place the marinated fish in a baking dish greased with vegetable oil. For information on different baking pans, see the article at the end of this recipe under the steps.

Step 10

Step 10
Pour the pollock pieces with milk and cheese sauce. Sprinkle the remaining grated cheese on top. Bake the fish in an oven preheated to 180°C for 20-25 minutes until golden brown. You can learn about the operating features of ovens by reading a separate article, link at the end of the recipe.

Step 11

Step 11
Serve baked pollock with cheese, garnished with cherry tomatoes and basil. Bon appetit!
