Salt to taste
Eggs 4 pc
Parsley 10 g
Vegetable oil 2 tbsp
Dill 15 g
Lavash thin 100 g

Wash parsley and dill, dry, remove thick branches. Finely chop the greens.

Wash the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. In a bowl, beat the eggs with a whisk until smooth, add salt. If desired, add any spices to taste.

Heat vegetable oil in a frying pan. Pour the beaten eggs into the frying pan, and stirring vigorously, fry over moderate heat until cooked. The egg mixture will look like flakes. Place the fried eggs on a plate and cool slightly. Add chopped herbs to the egg mixture and stir.

Cut the pita bread into 4 pieces. I used thin Armenian lavash measuring approximately 30*40 cm. Read about how to choose the right lavash at the end of the recipe.

Visually divide the filling into 4 portions. Place the filling on the bottom of the lavash sheet. Cover the remaining cut parts, as thin pita bread tends to dry quickly.

Wrap the pita bread over the filling, folding the side edges.

Roll the pita bread into an envelope.

Add vegetable oil to a suitable sized frying pan. Fry the lavash envelopes on one side until golden brown.

Turn the envelopes over to the other side and fry until done.
