Recipe instructions

Step 1

Step 1
First, prepare the ingredients for the pancakes. It is better if they are at room temperature — this way the dough will be easier to mix.

Step 2

Step 2
Mix liquid ingredients (milk, water and eggs) and sugar and salt in a separate container.

Step 3

Step 3
You can use a blender to achieve a perfect, completely smooth texture.

Step 4

Step 4
Sift the flour into a separate container.

Step 5

Step 5
Add beautiful and airy sifted flour to the liquid ingredients.

Step 6

Step 6
You can use the blender again to quickly combine the flour with the rest of the ingredients.

Step 7

Step 7
After using the blender, we additionally go over the dough with a spoon to make sure that there are no lumps in it.

Step 8

Step 8
Heat a frying pan with a minimum amount of vegetable oil. There is no need to add oil after frying the first pancake.

Step 9

Step 9
Use a brush to distribute the oil throughout the pan.

Step 10

Step 10
Add the butter to the dough last, stirring thoroughly with a spoon until smooth.

Step 11

Step 11
The finished dough should be very liquid.

Step 12

Step 12
Letʼs start frying the pancakes. I poured the dough into a narrow container from which it is convenient to pour the dough, but you can use a ladle instead.

Step 13

Step 13
Turn the pancakes over once the dough has become matte and the edges have turned golden.

Step 14

Step 14
Place the finished pancakes on top of each other as they fry. I cover them with foil on top to keep them warm.

Step 15

Step 15
After frying the pancakes, you can prepare the ingredients for the caramelized bananas.

Step 16

Step 16
We peel the bananas, cut off especially dark, ripe places (because otherwise, when cooked, they will turn into porridge due to their excessive softness).

Step 17

Step 17
Cut the bananas into pieces of approximately equal thickness, 1-1.5 cm.

Step 18

Step 18
To make the butter melt faster, cut it into small pieces before adding it to the ladle or frying pan.

Step 19

Step 19
Melt the butter over low heat.

Step 20

Step 20
Add sugar to the melted butter, stir with a spatula. The spatula must be heat-resistant, because... boiling sugar can deform silicone or, for example, plastic. A wooden spatula works well.

Step 21

Step 21
After the sugar boils, do not get distracted, wait for the moment when the mass darkens slightly.

Step 22

Step 22
Add hot (required!) heavy cream (I use 20 percent). The mixture will start to sizzle, so be careful.

Step 23

Step 23
After the caramel mass combines well with the cream, you can add bananas. Give them a stir after a minute or two — they will soften and cook very quickly. Itʼs okay if you overexpose them a little, because... bananas are used as a filling for pancakes and the soft texture does not interfere with them.

Step 24

Step 24
Cool the finished bananas slightly and begin folding the pancakes.

Step 25

Step 25
Cover the filling with a pancake first on one side.

Step 26

Step 26
Then — from below and from above.

Step 27

Step 27
Cover the pancake with the remaining side.

Step 28

Step 28
Ready-made pancakes can be sprinkled with powdered sugar before serving.
