Salt 0.5 tsp
Sugar 2 tbsp
Wheat flour 2.5 cup
Water (boiling water) 0.25 l
Vegetable oil 5 tbsp
Chicken eggs 2 pc
Soda 0.5 tsp
Kefir 0.5 l

How to fry custard pancakes with holes in kefir? Prepare the ingredients according to the list. Kefir can be used at any fat content, but not less than 2.5%, and it does not have to be fresh; yesterday’s, slightly sour product will do. All ingredients should be at room temperature for the best dough. Beat eggs into a deep bowl, add sugar, salt, kefir and vegetable oil.

Beat all ingredients with a mixer, blender or hand whisk until smooth.

Add the sifted wheat flour to the liquid mixture and stir again. The flour must be sifted to remove possible debris and also to saturate it with oxygen, which, in turn, will affect the quality of the finished products. The dough should be as thick as sour cream. Dissolve soda in a glass of boiling water and pour it in a thin stream into the bowl with the dough. Immediately stir the dough vigorously. There is nothing wrong with if there are any lumps in the dough, they will disperse later. Leave the dough to rest for about half an hour at room temperature. The consistency of the dough should be similar to regular pancake dough.

A large number of bubbles should form on the surface of the “rested” dough. Stir it again until all the lumps of flour disappear. You can move on to frying pancakes.

Using a ladle, pour the dough into the pan and spread it over the entire surface in a circular motion. Fry the pancake until golden brown on both sides. There is no need to add oil in the future.
