A wonderful side dish or delicious Lenten dish! For pearl barley with mushrooms, you can take any mushrooms that you currently have: fresh, dried, pickled, salted, including different types. Makes a satisfying everyday lunch or dinner.

Basic:

Garlic 2 clove
Salt to taste
Bulb onions 1 pc
Champignon 300 g
Dry spices to taste
Pearl barley 200 g
White mushrooms (boiled) 300 g
Soy sauce 2 tbsp

How to make pearl barley with mushrooms? Prepare the necessary ingredients for this. For cooking, you can use any mushrooms, including assorted mushrooms. I use boiled porcini mushrooms and champignons for cooking. But you can only stop at champignons.

For quick cooking, it is best to soak pearl barley in water overnight. To do this, rinse the cereal well several times in cold water. Then fill with clean water and leave to stand for at least 10 hours. During this time, the pearl barley will swell and become softer. Thanks to this, it will take much less time to cook. In the morning, drain off excess water.

To cook, bring the water to a boil and pour the swollen cereal into it. Leave to cook for at least 20 minutes. Salt the pearl barley at the end of cooking. The finished pearl barley is soft, but does not fall apart. Place it in a colander, rinse and allow excess water to drain.

Peel the onion, rinse and finely chop. Pour some vegetable oil into a hot frying pan and fry the chopped onion for a minute until translucent.

Boiled wild mushrooms are ready for frying. If they are frozen, you need to defrost them. Rinse the champignons well to remove dirt and cut into slices.

Place the prepared mushrooms in the frying pan with the onions, stir and fry everything together for 5-7 minutes until the mushrooms begin to brown. Salt them a little and sprinkle with your favorite spices.

Add pearl barley to the mushrooms, add garlic, passed through a press and mix everything. Warm everything together for another 2-3 minutes.
