How to make buckwheat porridge with prunes? Prepare all the necessary ingredients. Rinse buckwheat thoroughly. Wash the cereal, changing the water several times until it becomes clear. To reduce cooking time and preserve the maximum of beneficial substances contained in buckwheat, you can prepare the cereal in advance. Place the washed buckwheat in a bowl or saucepan and cover with hot water, leave for a couple of hours. During this time the cereal will swell well.

Take prunes and wash them well under running water. Place it in a bowl, pour boiling water over it and leave for 15 minutes. If your prunes are not very dry, then just keep them in hot water for about five minutes, otherwise they will soften greatly and lose their shape. Then drain the water and dry the prunes. Cut it into small pieces. Set it aside, weʼll come back to it in the next steps.

Take the carrots, wash them with a brush under running water, peel them and grate them on a coarse grater. If desired, you can cut into strips or cubes.

Peel the onions and finely chop with a knife.

Pour vegetable oil into a frying pan (it is better to use a deep cast-iron frying pan or saucepan). Turn on the heat; when the oil is hot, add the cooked onions and carrots to the pan. Fry the vegetables over medium heat, stirring occasionally with a spatula, until the onion is translucent and the carrots are soft.

Add cooked prunes to the vegetable frying. Stir and keep on fire for about 5 minutes.

Then transfer the swollen buckwheat into a frying pan with vegetables and prunes. The remaining buckwheat water in the bowl can also be poured into a frying pan; it will be needed for stewing. Add spices: salt and ground black pepper to taste. If you wish, you can add your other favorite spices. Stir, cover the pan with a lid and simmer over medium heat for about 10-15 minutes, until the buckwheat porridge is ready, the cereal should become soft.

If all the liquid has evaporated and the cereal is not yet ready, add a little more clean filtered water. When the porridge is ready, turn off the heat and let it sit covered for about 15 minutes. Serve the dish, optionally with meat and sauce, salad or vegetables. Bon appetit!
