Oven-Roasted Chicken Legs with Vegetables

And your favorite spices and herbs will add a special touch.

Ingredients (4 portions)

Basic:

Onion 1 pc
Garlic to taste
Salt to taste
Ground black pepper to taste
Tomato paste 3 tbsp
Carrot 1 pc
Vegetable oil 1 tbsp
Dry spices to taste
bell pepper 1 pc

How to bake chicken legs with vegetables in the oven? Prepare all the products indicated in the recipe. If you have frozen legs, first remove them from the freezer and leave them at room temperature until completely thawed.

Peel the carrots, onions and garlic. Cut the pepper in half, remove the core and seeds. Wash all vegetables under running water and dry with paper towels.

Remove any remaining feathers from the chicken legs, if any. Rinse and dry the bird. Cut the legs into small portions. Place them in a deep bowl.

Place tomato paste, a pinch of salt and spices to taste in a separate small bowl. I used ground paprika and thyme. Instead of tomato paste, it is permissible to use ketchup or homemade adjika. Mix everything well.

Cut the vegetables into large pieces as desired. Cut the garlic cloves in half lengthwise or leave whole.

Add half of the tomato sauce to the vegetables and mix everything well.

Add the remaining sauce to the legs.

Mix everything so that the bird is completely in the aromatic tomato sauce. Leave it this way for 10-15 minutes.

Place vegetables in an even layer on a deep baking sheet. Scatter the poultry pieces on top.

Place the pan in the preheated oven and bake until the chicken is done. Cooking time and temperature depend entirely on the capabilities and individual data of your oven. I baked for about 40 minutes at 220 degrees.

At the end of cooking, set the convection mode and left for another 10 minutes.
