Ingredients (4 portions)

Basic:

Onion 0.5 pc
Garlic 1 clove
Chilli (third of the pod) 0.33 pc
Tomatoes 1 pc
Olive oil 2 tbsp
Salt to taste
Ground black pepper to taste
Dry spices to taste
Greenery (bunch of parsley or cilantro) 30 g
Lime juice 1 tbsp
Avocado 2 pc

How to make classic guacamole sauce? Prepare your food. Choose avocados that are soft, with intact skin and without blemishes. You can use lemon instead of lime.

Peel the onion and chop as finely as possible.

Place it in a bowl and pour in lime juice — this way you marinate the onions, ridding them of excess bitterness.

Make a tomato concasse. What is tomato concasse? This is their special preparation and cutting, in which the skin and seeds are removed. How to make tomato concasse? First, remove the skin from them. To do this, make cross cuts on the tomato, and then put it in boiling water for 1-2 minutes.

Immediately transfer the tomato from boiling water to a bowl of cold water. Due to temperature changes, the tomato skin will easily separate from the pulp.

Peel the tomato, cut it into slices and remove the seeds, leaving only the pulp.

Place the avocado pulp in a bowl, add the onion and lime juice, and stir. The acid from citrus fruits will prevent the avocado from darkening, so if you don’t want to add onions, be sure to add lime or lemon juice. Add the remaining ingredients — tomatoes, peppers, herbs, garlic. Pour in olive oil, salt and season with spices. Stir. The sauce is ready!
