Basic:

Garlic 2 clove
Olive oil 30 ml
Salt to taste
Ground black pepper to taste
Lemon juice 30 ml
Basil 150 g

How to make basil sauce? Prepare your ingredients. For this sauce, take any basil — green or purple. Extra virgin olive oil is best, but if you don’t have it, you can use whatever you have. I sometimes use the most common vegetable, refined one.

Rinse the basil greens well and dry with paper towels. Tear the leaves off the stems; basil stems are coarse and difficult to chop. You can use them when cooking broth or stewing meat. Or finely chop the stems with a knife and dry them, then add the dry ones to any dishes for flavor.

Peel the garlic cloves and place in a blender along with the basil. Grind them into a mushy mass. For chopping, you can use either a stationary blender, or a chopper attachment from a mixer, or an immersion blender. If you don’t have any equipment at hand, then try making the sauce the old fashioned way — in a mortar. It won’t be easy, but this is exactly how Italian housewives made the sauce before the advent of blenders.

Add olive oil, lemon juice, salt and ground black pepper to taste. Beat again with a blender until smooth. Place the sauce in small, clean jars and store in the refrigerator.
