It is better to purchase chilled offal to be sure of the quality and freshness of the chicken liver, as evidenced by the brown color with a burgundy tint, a smooth and shiny surface, and a pleasant sweetish smell. If it is orange, it means the product has been frozen and thawed several times. The smell of ammonia also indicates liver damage.

If the product was purchased frozen, it is important to defrost the liver correctly. This must be done in the refrigerator at a temperature of +5, then all the taste of the offal will be preserved. We thoroughly wash the chicken liver, trim off excess fat and membranes. Cut the liver into small pieces, rinse again to remove excess blood, dry it with paper towels or place in a colander to drain completely.
