How to make fried champignons with eggs? Prepare the necessary ingredients for this. You can change the proportions of all ingredients to your taste. You can use any mushrooms for frying. These can be boiled wild mushrooms or, like mine, fresh champignons.

Choose medium-sized champignons, as they will shrink in size when frying. Rinse the mushrooms well in running water to remove any contaminants. Then dry the mushrooms with a paper towel. If mushrooms are kept wet for a long time, they may become soggy. Cut the washed champignons into slices or simply into 2-4 pieces.

Pour a little vegetable oil into a hot frying pan and place the chopped champignons. Fry the mushrooms for 3-5 minutes over low heat. Stir them occasionally to prevent them from burning.

Spread the fried champignons slightly apart in the pan and break the eggs. Try to break them carefully so as not to damage the yolk. Fry everything together for another 4-5 minutes over low heat. Add a little salt to taste and add your favorite spices. The pan can be covered with a lid. The eggs will cook faster this way, but then the yolk will be covered with white. This does not happen when the lid is open.
