Quick & Easy Liver Quenelles

Basic:

Salt to taste
Ground black pepper to taste
Eggs 1 pc
Breadcrumbs 3 tbsp
Bulb onions (large) 1 pc
Beef liver 300 g

How to cook liver quenelles? Easy, simple and fast! Prepare all the necessary products. Take a large onion. I used three small ones. Turn on the oven to 200 degrees.

Rinse the liver under running water and dry with a clean, dry towel. Remove the film and cut into small pieces that will fit in the blender bowl.

Peel the onion. I cut each onion into 6 pieces. My blender handles them easily. And you focus on your products.

Grind the liver and onion in a blender. Add salt, ground black pepper and egg white and beat thoroughly again.

Add breadcrumbs and mix thoroughly. Fill a small saucepan with water. I have a saucepan with a diameter of 20 cm. One liter of water will be enough for such a dish. Add salt to taste. Wait for the water to boil.

Using two tablespoons, form cutlets from the liver mass and place them in boiling water. As soon as the quenelles float to the surface, reduce the heat and simmer for 2-3 minutes over medium heat.

Remove the quenelles from the water and blot off any excess liquid with a paper towel. Brush the quenelles with egg yolk, place in a baking dish and place in an oven preheated to 200 degrees for 2-3 minutes to form a beautiful blush. The exact time depends on how your oven operates.
