Ingredients (4 portions)

Basic:

Onion (large) 1 pc
Garlic (optional) 4 clove
Tomatoes 3 pc
Salt to taste

Rack of pork ribs 1 kg

How to make pork ribs stewed with vegetables in a frying pan? Prepare all the products indicated in the recipe. If you have frozen ribs, remove them from the freezer in advance and leave them at room temperature until completely defrosted. If you want a spicy dish, then take a few chili peppers along with the bell pepper.

Rinse the ribs and dry with napkins. Cut the ribs into portions. Peel the carrots and onions. Cut the bell pepper in half and remove the core and seeds. Wash all vegetables in cold water.

Cut the onion into thin rings or half rings, chop the pepper into feathers or half rings. Carrots — in sticks or circles, as you prefer. Cut the tomatoes into slices. I used two medium sized tomatoes and a few cherry tomatoes.

Heat vegetable oil in a thick-bottomed frying pan. You may need a little less or more oil depending on the diameter of the pan. Send the ribs to fry. Over high heat, fry one side until browned, then turn over and cook the other side until golden brown.

Place the chopped vegetables in the pan, add salt to taste and mix everything. At this stage, you can add peeled garlic cloves. Reduce the heat to low, cover the pan with a lid and simmer the ribs for about half an hour. After a while, open the lid and check if the ribs are burning. If necessary, add just a little water.

After the specified time, add the tomatoes to the ribs. Add dry seasonings to taste. I used a mixture of ground peppers. Cover the pan again with a lid and leave on low heat for 30 minutes. The tomatoes should give juice and the meat and vegetables will be stewed in a flavorful sauce. If there is not enough liquid in the pan (and this happens if the tomatoes are not juicy), then add 20-50 ml. water.

At the end of cooking, open the lid. If there is too much liquid, increase the flame to maximum and evaporate the required amount of juice. I usually don’t evaporate the liquid, as it produces a very flavorful vegetable sauce that complements the ribs perfectly. Sprinkle the dish with herbs.
