Stuffed Italian Rice Balls (Arancini)

This is an Italian recipe for delicious rice balls stuffed with meat. In Italian, “arancini” is very similar to the Italian name for oranges. Small rice balls with all sorts of fillings really look like red citrus fruits, although sometimes arancini are made cone-shaped. And once molded, they bake or fry, not forgetting to bread them in breadcrumbs. Preparing this dish is not difficult, but you will have to tinker. But how delicious!

Ingredients (8 portions)

Rice mass:

Round rice 300 g
Chicken eggs 1 pc
Butter 70 g
Hard cheese 100 g

Filling:

Minced meat 300 g
Bulb onions 1 pc
Hard cheese 100 g
Sugar 1 g
Greenery to taste
Salt to taste
Ground black pepper to taste
Tomato paste 1 tbsp

Breading:

Wheat flour 150 g
Chicken eggs 2 pc
Breadcrumbs 2 cup

Recipe instructions

For the filling, cut the onion into cubes and fry in oil for 5 minutes. Add the minced meat to the onion, add water and bring to a boil, constantly kneading the minced meat lumps. Salt, pepper, add sugar and tomato paste. Stir and cook over medium heat for 20 minutes. Place parsley in the pan with the meat and heat for another minute. Then remove from heat and stir in grated cheese.

Boil the rice until tender, mix with butter and grated cheese. Add the beaten egg and mix well.

With your hands soaked in water, take a mound of rice and knead it in your palm. Place a spoonful of meat filling in the middle of the flatbread. Form a ball. Repeat with all the rice and filling.

Beat the remaining eggs with a pinch of salt. Dip the aracini in flour, then in the egg and breadcrumbs.

Fry in hot oil for 5-7 minutes (turning) until golden brown. The oil should cover the arancini by more than half.
