Portioned fish dish, almost without bones. Sea bass baked in the oven can be prepared for lunch or dinner. No preliminary preparation is required for this. I will use fresh basil to flavor the fish. But you can exclude it or replace it with dried, for example.

How to bake sea bass in the oven? Before you start cooking, prepare all the necessary ingredients. It is advisable to use chilled fish that has not been frozen. But if you only have frozen, then let it thaw on its own at room temperature. You should not use hot water for this. Because of this, the finished fish will be dry and not very tasty, since all the juices will leave it. Olive oil can be replaced with sunflower oil.

Fresh fish must be cleaned. Make a longitudinal incision on the abdomen and remove the entrails. Then rinse the fish well in running water. Be careful — the fish has sharp fins. They can be removed if desired. To serve the fish beautifully to the table, it is better not to cut off the head and tail.

Sprinkle fish inside and outside with a little lemon juice. This will remove the unpleasant, intrusive fishy smell.

Then coat the fish inside and out with olive oil and sprinkle with a little salt and spices. As a spice, you can use a ready-made set of fish spices or simply add a little dried herbs. I use some dried dill.

Prepare a baking dish. It can be ceramic, glass or metal. Peel the onion and rinse in cold water. Cut the peeled onion into half rings. Wash the tomatoes well and cut into slices, removing the stem. Grease the bottom of the pan with a little olive oil and add chopped onions and tomatoes.

Then place the prepared fish.

Add a few basil leaves. A couple of leaves inside and a few outside. Place the dish with the fish in the oven, preheated to 200 degrees for 25-30 minutes. Be guided by your oven.
