Remove the butter from the refrigerator in advance and let it sit at room temperature for several hours until it becomes soft. To speed up the process, you can cut the butter into pieces. This way it will warm up faster. Sift premium flour through a sieve and add a pinch of soda and salt. Thanks to sifting, the flour will be saturated with oxygen, and the dough will turn out more tender.

In a convenient mixing bowl, combine soft butter and sugar. Beat everything together with a mixer for 2-3 minutes to make the butter fluffy. Then add egg and sour cream to the dough. Mix everything well.

Gradually add flour to the dough and knead the shortbread dough. This is convenient to do with a wooden spatula. There is no need to knead the shortbread dough for a long time, otherwise excess flour will enter it and the products made from it will be hard.

The finished dough is very soft, tender and flexible. It is pleasant to work with and does not stick to your hands. Depending on the quality of flour, you may need a little more or less. Turn on the oven to 190 degrees.
