How to make juicy beef chops in a frying pan? Prepare the necessary ingredients. For this recipe, it is better to use fresh meat rather than frozen, otherwise the chops risk turning out dry. Eggs are needed large, selected. If the eggs are small, it is better to take 3 pieces so that there is enough batter for all the meat. In addition to the spices indicated in the recipe, you can add your own to taste, or replace some spices with others to suit your taste.

First prepare the batter. How to make batter? Break the eggs into a bowl and whisk until smooth. The yolk should mix well with the white.

Add turmeric (you can substitute turmeric for curry), paprika, salt and ground black pepper. Whisk the mixture again until smooth.

Add flour. I advise you to sift the flour through a sieve — this way there will be fewer lumps and the batter itself will be more tender.

Mix the mixture thoroughly, breaking up any lumps. If the batter turns out too thick and dense, dilute it with 1-2 tbsp. vegetable oil. The finished mass should be viscous, but fluid.

Wash the meat and be sure to dry it with a paper towel, otherwise excess moisture will prevent it from frying — it will stew.

Then cut the meat into thin slices no more than 1 cm wide. For convenient and even slicing, I advise you to put the meat in the freezer for 20 minutes. During this time, it will not have time to freeze very much, but it will set slightly and it will be easier to cut it into thin pieces. I had pieces no more than 5 mm thick.

Beat the beef slices on both sides with a hammer, trying to maintain the integrity of the meat; there should be no through holes in the chop. To do this, cover the pieces of meat with cling film or a plastic bag. Another positive point is that juice will not fly from under the meat in all directions.

Dip the prepared chops into the batter on both sides.

Heat some vegetable oil in a frying pan over high heat. Place the meat in the batter and reduce the heat to medium. Fry the chops on both sides for about 2 minutes until golden brown, adding vegetable oil if necessary.
