Sugar 270 g
Wheat flour 250 g
Egg yolks 10 pc
Baking powder 1.5 tsp
Powdered sugar (for sprinkling) 2 tsp

How to make lady fingers cookies for tiramisu? Prepare your food. From this amount of products you will get a lot of cookies, about four 30*40 baking sheets, I prepared half a portion. It is just enough for a standard portion of tiramisu.

Wash the eggs well and dry. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Carefully separate the eggs into whites and yolks by whisking them into separate bowls. Since less proteins are required, remove some of them.

Beat the yolks with a mixer, gradually adding some of the sugar (170 grams if you are preparing a whole portion, and 85 if you are preparing half, like me). Add sugar in small portions, kneading well after each. Beat the yolks until white and increased in volume.

In another bowl, start beating the egg whites. First at low speeds until white foam appears. Then increase the speed and start adding the remaining sugar (100 grams if you are preparing a whole portion, and 50 if you are preparing half, like me). Add in small portions, also kneading well after each. Beat the egg whites until they form strong peaks — they should not fall off after removing the beaters.

In several additions, add the whipped whites to the yolks, gently kneading them with a silicone spatula with upward movements, as if burying them.

Then sift flour and baking powder into the egg mixture. It is important to sift the flour to saturate it with oxygen. Then the cookies will turn out airy and rise well during baking.

Also, gently stir the dough with a spatula until smooth. Place it in a piping bag fitted with a 1cm round tip.

Line a baking tray with baking paper. Place cookies on it in the form of long sticks about 7 cm long. Try not to press the bag so that the pieces are high. Leave some space between the cookies as they will increase in size as they bake.

Sprinkle the cookie dough with powdered sugar.

Preheat the oven to 200°C. Bake the cookies for 10-15 minutes until they are golden brown. Remove the finished cookies, cool and remove from the paper.
