Ingredients (6 portions)

Meatballs:

Onion 1 pc
Salt 1.5 tsp
Ground black pepper to taste
Water 50 ml
Eggs 1 pc
Breadcrumbs 50 g
Minced meat 500 g
Flour to taste

Vegetable stew:

Onion 1 pc
Garlic 2 clove
Tomatoes 2 pc
Salt to taste
Ground black pepper to taste
Butter 2 tbsp
Water 500 ml
Parsley to taste
Carrot 1 pc
Vegetable oil 1 tbsp
bell pepper 1 pc
Saffron to taste
Green pea to taste
Basil 1 tsp
Rosemary 1 tsp

1. First, letʼs make the meatballs. Finely chop the onion in a blender, add minced meat, salt, pepper to the onion and beat well. Add water to the minced meat and mix.

Add bread crumbs, stir.

Break the egg there, mix well and knead the minced meat.

Make walnut-sized meatballs from the resulting minced meat and roll them in flour.

Fry meatballs (in small batches) in vegetable oil until golden brown.

Place on a dish lined with kitchen paper to absorb all excess oil.

2. While the meatballs are frying, you can prepare the vegetables for the stew (clean, chop). Heat the butter and vegetable oil in a saucepan.

Add chopped carrots and red bell pepper to the onion.

Fry until soft, about five minutes. Add tomato pulp (grate), hot water (boiled), salt, sugar, black pepper, rosemary, basil, grated garlic, mix everything, let it boil. Taste and, if necessary, add salt and pepper. Cover the saucepan with a lid and simmer the stew over low heat for 30 minutes.

3. Then, add meatballs to the vegetables and simmer for another 10 minutes. After the meatballs have already cooked for 10 minutes, add frozen green peas, a couple of pinches of saffron and simmer for another 10 minutes. Finally add chopped parsley and turn off the heat.

While the stew is cooking, you can boil the potatoes as a side dish. Bon appetit!
