One-Pan Pasta with Vegetables

Fast, simple and without unnecessary dishes! Perfect! Traditionally, pasta is boiled in a saucepan, then drained in a colander, and then mixed in a frying pan with sauce. I propose to break the rules and cook the horns in a frying pan with vegetables — onions and tomatoes.

How to make horns in a frying pan? Prepare the necessary products. I advise you to take pasta only from durum wheat, they do not become overcooked. Read more about the intricacies of choosing pasta in the article at the link at the end of the recipe. I advise you to take small pasta, such as horns. Vary the number of tomatoes according to their size and your taste. I put two, but I could have added a third. Choose spices according to your taste. You can add garlic if you wish.

Peel the onion and finely chop. You can also cut the onion into half rings if you wish.

Wash and dry the tomatoes. Then cut them into small cubes. You can grate them on a coarse grater — they will still soften in the sauce to a puree. If desired, you can remove the skins from the tomatoes. There is a great way to do this. First, cut the top of the tomato crosswise. Place it in boiling water for a minute and then immediately transfer it to cold water. Due to temperature changes, the skin will easily move away from the pulp and can be removed.

Heat a deep frying pan. Choose the size taking into account the fact that pasta will be cooked in it, which tends to increase in size. Pour vegetable oil into the frying pan. Add onion. Fry the onion over low heat, stirring it, for several minutes, until transparent. Add tomatoes to onions. Let the fire remain small. Stir in tomatoes and onions.

Cover the pan with a lid and simmer the vegetables for about 10 minutes.

The tomatoes will become soft and can be mashed with a spatula until smooth.

Place the cones into the pan. Add salt and pepper. Stir pasta and vegetables. Let them fry together for a few minutes. You can prepare pasta without vegetables by immediately placing dry pasta in a frying pan with oil, frying it a little and then continue cooking according to the recipe.

Pour the freshly boiled water into the pasta. It should completely cover them. Stir. Cook the pasta, stirring occasionally, uncovered, over low heat. After five minutes, taste them. If the pasta is not ready yet and the water has evaporated, add a little boiling water.

The horns should absorb all the water and become soft, but not mushy. To do this, I advise you not to overdo it with water. Be sure to stir the pasta as you go so it cooks evenly. Finally, turn off the heat and cover the pan with a lid. The pasta will absorb the remaining moisture and become even tastier. When serving, sprinkle the pasta with grated cheese. Bon appetit!
