In addition, when viburnum is heated to temperatures above 100°C, the berries change color from a bright and juicy red to an unattractive gray-brown. Viburnum berries are very healthy, although they have a specific taste. Viburnum has long been used as a medicinal plant. The first information about its healing power dates back to the 16th century. Even then, it was noticed that the berries improve the functioning of the heart and have a tonic, astringent and diuretic effect. Viburnum was especially often used as a hemostatic and wound-healing agent — crushed bark or crushed viburnum berries were applied to wounds.

The viburnum needs to be thoroughly washed, separated from the branches and sorted, removing spoiled berries. Place clean berries in a colander or sieve and wipe with a wooden spoon or use a blender that does not crush the seeds and turns the viburnum into puree. You should only have bones and skins left in the sieve. If you are grinding viburnum with your hands, in order not to smear the whole kitchen, I put a bag on top of the sieve, stick my hand in there and grind everything in it.

Add all the sugar (usually 1:1) to the resulting puree, mix and leave overnight until the sugar is completely dissolved. Place the finished puree into jars, close the lids and store the viburnum in the refrigerator. Viburnum is well suited for combination with fruits such as black currants and apples.

In winter, you can make a delicious drink from it by adding it to water. You can use viburnum as jam or for serving pancakes, cheesecakes, pancakes, and casseroles.
