For the gingerbread dough:

Wheat flour 1 kg
Eggs 2 pc
Honey 200 ml
Butter 200 g
Sugar 200 g
Cocoa 1 tbsp
Salt 0.5 tsp
Soda 3 tsp
Ginger powder 1 tsp
Ground cinnamon 1 tsp
Carnation 1 tsp
Nutmeg 0.5 tsp
Vanilla sugar 3 g

For the gingerbread glaze:

Egg whites 1 pc
Powdered sugar 200 g
Lemon juice 1 tbsp
Food coloring to taste

Mix honey, sugar and butter. Beat with a mixer until smooth.

Add eggs, ginger, cloves, cinnamon, nutmeg and vanilla sugar. Beat with a mixer until smooth.

Add flour, soda, salt in parts and knead the dough with a silicone spatula.

Add cocoa and continue kneading the dough. Do it quickly.

Sprinkle the table with flour, lay out the dough and quickly knead the dough.

Divide the dough into four parts, wrap in cling film, and place in the refrigerator overnight.

Gingerbread dough can be stored in the refrigerator for 1 month. This is a recipe for aromatic gingerbread dough, from which you can make delicious and beautiful pastries.

Roll out the dough into a layer 4 mm thick. Cut out heart shapes with a mold.

Add juice and beat for a couple more minutes. The glaze for gingerbread is dense, when dry it has a smooth, even surface and does not crumble. This is not the kind of glaze that is like Easter cakes and doesn’t turn out brittle and heavy, and doesn’t crumble when it dries.

To draw fine lines, the glaze should be thick, and to cover the surface a little thinner. For a thick glaze, you can add a little powder, and for a thin glaze, you can add 0.5 tsp. water and stir.
