It is better to use water and eggs at room temperature, because salt does not dissolve well in a cold mixture. Instead of vegetable oil, you can use butter to grease the pan. Break the eggs into a deep bowl. If the eggs are small, take 3 pieces. Depending on the diameter of your pan, the omelette will be thinner or thicker. If you need a taller omelette, then take a frying pan with a diameter of about 16 cm. I have a frying pan with a diameter of 20 cm.

Pour water into the eggs and add salt. Use finely ground salt. Large crystals may not dissolve well and then crunch on your teeth. Beat everything with a fork or whisk until smooth. There is no need to beat for a long time. It is enough for the white and yolk to combine with water and for the salt to dissolve.

Heat vegetable oil in a frying pan over medium heat. Pour the egg mixture into the pan. Reduce heat to low. Next, fry the omelet under the lid until cooked, or you can carefully turn the omelet over to the other side. To do this, transfer it to a flat plate, and then turn it from the plate into the frying pan. Fry the omelette for about 1 more minute and turn off the heat.
