Salt to taste
Sugar 60 g

How to make homemade simple shortbread cookies with vegetable oil in the oven? Prepare your food. Use refined, odorless oil, otherwise the cookies may start to taste bitter. You may need a different amount of flour — more or less, depending on the dough. Immediately turn on the oven to preheat at 180°C.

Place the egg in a glass of warm water. This is necessary for it to heat up — sugar will dissolve faster in a warm egg. Keep it there for 3 minutes. Then remove, dry and beat into a bowl. Add all the sugar (you can reduce the amount to your taste). Beat the egg and sugar with a mixer at high speed until a fluffy light mass is obtained.

Next, pour vegetable oil into the egg mixture. Also, use a mixer to mix the butter and eggs until smooth. These steps can be done with a hand whisk, but using a mixer is faster.

Add baking powder and a pinch of salt to the flour and stir. Salt will serve as a flavor enhancer; don’t be afraid to add it to sweet baked goods. Sift the flour into the egg-butter mixture. I advise you not to add all the flour at once, but most of it, and add the rest as needed. This way you will not fill the dough with flour and the cookies will turn out soft. Knead the dough with a spatula or spoon. If it turns out too liquid, add more flour. The dough should eventually come together into a ball, but remain soft. During the kneading process, you can add pieces of nuts or chocolate to the dough. As well as any flavorings — vanillin, cinnamon, lemon zest.

Line a baking sheet with baking parchment. Use a spoon to scoop out the dough and roll it into a ball the size of a walnut with your hands. Place the balls on the paper, flattening them slightly. A separate article at the link at the end of the recipe will help you choose parchment.

Bake cookies in the oven at 180°C for 15-20 minutes. The exact time will depend on the features of your oven. Mine takes a long time to bake, I left the cookies on for the entire 20 minutes. Focus on the appearance of the cookies — they will turn golden. But donʼt keep it for too long — the cookies will become hard.
