Basic:

Tomatoes 1 pc
Eggs 3 pc
Green onions 15 g
Hard cheese 50 g
Tortilla (2 pieces) 120 g

How to make a stuffed tortilla in a frying pan? Prepare your ingredients. You can take ready-made tortillas, or you can bake them at home yourself. If you donʼt like green onions, replace them with fresh herbs or leeks.

Place a frying pan on low heat and heat it up. You can add a little vegetable oil if you want, but I usually donʼt. Place one tortilla in the pan and heat for 2 minutes. Then turn the tortilla over to the other side.

Break the eggs into a bowl, add salt and pepper and mix thoroughly with a fork until smooth. Carefully pour the eggs onto the tortilla that is in the pan. Cover the pan with a lid and fry the tortilla for 5-7 minutes. The eggs should be almost completely cooked.

Rinse the green onions, dry and chop. Sprinkle the top of the eggs all over the surface.

Wash the tomato, dry it and cut it into cubes. Place it on the eggs as well.

Grate the cheese on a fine grater and pour over the top of the tortilla.

Place the second tortilla on the cheese and press it down a little.

Using a wide spatula, carefully flip the tortilla over and fry for another 3-4 minutes. The bottom should be browned and the cheese should be melted.

Remove the tortilla from the pan and cut into four pieces. Serve the dish immediately before the cheese hardens.
