Cod Liver Salad with Cheese and Rice Layers

An unusual version of a long-familiar salad will delight cod liver fans. This version of the salad can be served on a holiday table, preferably either on a large platter or in a transparent container so that the layers are visible. The salad is very tender. Rice removes excess fat from cod liver, and cheese adds an original flavor to the dish. The most important thing when preparing this salad is to successfully balance the amount of additional products such as rice and cheese, so as not to overwhelm the usual taste of the liver. It is known that cod liver is an extremely healthy product; other components of this salad are also rich in vitamins and microelements, and mayonnaise can be prepared at home. Try this dish and you will cook it again and again. Serve it chilled.

For the salad:

Rice 200 g
Hard cheese 100 g
Bulb onions 1 pc
Chicken eggs 3 pc
Cod liver 250 g

For refueling:

Salt to taste

Mayonnaise 100 g

To make the salad less fatty, I suggest replacing traditional mayonnaise with a dressing for which you take 1 part mayonnaise and 1 part low-fat sour cream (10%) or yogurt without sugar and additives (I took homemade yogurt). Finely chop the dill, add to the dressing, add salt and pepper and mix well. In general, use the dressing sparingly, otherwise the salad will run and look untidy.

Pre-boil the eggs, peel, separate the whites and finely chop. Grate the cheese on a fine grater into a separate container.

After thoroughly washing the rice and then boiling it until tender, rinse it again, let the water drain well and lay it out as the first layer of our salad.

Drizzle the prepared dressing to help seal the rice layer and make it less dry.

Open the can, remove the liver, mash with a fork and place on top of the rice. Do not put dressing on this layer.

Finely chop the onion and pour boiling water over it to remove excess bitterness. Drain the cooled water and squeeze the onion well. (I took red onion. Since it has a more delicate taste, I didn’t have to pour boiling water over it, and with it the layer in the salad was brighter). Place finely chopped onion on the liver layer. On top — a little bit of dressing.

Then add egg whites and a little dressing.

The next layer is finely grated cheese and a little dressing.
