Pear & Brie Salad with Cherry Tomatoes

Brie can be replaced with any other type of cheese. I came up with this salad on the fly. Lately I havenʼt been craving anything baked or fried at all. Iʼm drawn to various cheese, fruit and vegetable salads with light non-mayonnaise dressings based on olive oil with the addition of honey, wine vinegar or lemon juice. So I spent the whole month experimenting with different food combinations and dressings. Among all the blue cheeses, I especially love brie and camembert, so I buy them quite often. And I always eat like this. But they make wonderful salads.

Ingredients (3 portions)

Basic:

Cherry tomatoes 50 g
Lettuce leaves 100 g
Pears 1 pc
Pistachios 50 g
Bree 50 g

Refueling:

Olive oil 2 tbsp
Lemon juice 1 tbsp
Honey 1 tbsp

Prepare the ingredients. To prepare a salad with pear, brie cheese and cherry tomatoes we will need: ripe juicy pear (Abbot, Conference varieties), cherry tomatoes, a piece of white mold brie or camembert cheese, salad mix (I have a Tuscany mixture).

Wash the salad mixture, drain in a colander, and dry.

Wash the pear, dry it, cut into thin slices, removing the seeds.

Cut brie cheese into thin slices.

Refueling. To prepare the dressing we will need: olive oil (extra virgin), honey and a little freshly squeezed lemon juice.

Combine olive oil with honey and lemon juice. Mix everything thoroughly until smooth.

Place salad mixture on a plate. Place pear slices on top.

Add tomato quarters.

Add brie cheese slices.

Peel the pistachios and add to the salad.
