Ingredients (3 portions)

For pancakes:

Eggs 1 pc
Wheat flour 50 g
Salt 0.5 tsp
Sugar 1 tsp
Milk 100 ml
Vegetable oil 1 tbsp

For the salad:

Chicken breasts 1 pc
Canned corn 100 g
cucumbers 2 pc
Pickles 1 pc
Dill 30 g
Mayonnaise 100 g

How to make a salad with pancakes and chicken? Chicken breast should be thoroughly washed and boiled in salted water. While the breast is cooking and cooling, you have time to bake the pancakes and prepare the remaining ingredients.

I prepared the simplest pancakes, using wheat flour. To make the dough without lumps, I always first mix the egg, salt, sugar and flour, rub it thoroughly with a whisk, and then add warm milk. If there are still lumps, the dough can be strained through a sieve. From this amount I got 6 pancakes.

Heat a frying pan and grease it with vegetable oil. The pancakes bake very quickly; there is no need to fry them too much, otherwise it will be problematic to roll them into a tube.

The edges of pancakes are always thinner than the middle; they can be used for decoration. For this edge, cut it 1.5-2 cm wide. I didn’t have a ring of the required diameter, so I cut it with a lid with a sharp edge, simply pressing the pancake around the entire circumference of the lid. You can cut with a regular knife or a pizza cutter on a plate of suitable size. Roll the remaining pancakes into a tube and cut into approximately 0.5 cm wide.

Cool the boiled breast and cut into not very small pieces so that the chicken meat feels like an independent ingredient in the salad, and not a ground mass. Slice the cucumbers. I had medium-sized fresh cucumbers; it was easy to cut them into strips. But the pickled gherkins were very small, I just cut them into rings. Wash the dill, dry it and chop it finely. Leave a few branches for decoration.

In a large bowl, combine chicken, cucumbers, corn, pancakes and dill, add salt and mayonnaise. In my case, it’s sour cream, since no one in our family eats mayonnaise. You can replace it with yogurt or any other sauce you like.

Place the salad in a beautiful salad bowl or plate. Divide the cut edges of the pancakes in half and roll them to form “roses”, and decorate the finished dish with them and sprigs of dill.
