Basic:

Onion 2 pc
Salt 2 tbsp
Sugar 1 tbsp
Water 0.5 l
Bay leaf 1 pc
Vegetable oil 1 tbsp
Peppercorns to taste
Vinegar (9%) 2 tbsp
Mackerel 2 pc

How to marinate mackerel with onion and vinegar pieces? Prepare all the ingredients needed for the recipe. Mackerel can be used either fresh or frozen. If you have frozen fish, remove it from the freezer in advance and leave it at room temperature until completely thawed.

Clean the mackerel from scales, remove the entrails and remove the fins, heads and tails. Be sure to remove the black film in the abdomen. Wash the carcasses thoroughly. Peel the onion and rinse under running water.

Cut the fish into pieces of equal width.

Prepare the marinade. To do this, pour water into a saucepan or small saucepan. Add salt, sugar, peppercorns and bay leaf. The recipe recommends adding 2 tbsp. spoons of salt. I usually use a little more, about 2.5 tbsp. Place the marinade over high heat, after boiling, pour in the vegetable oil and vinegar and immediately remove the pan from the heat. Cool the finished marinade.

At this time, cut the onion into half rings or rings of medium thickness.

Mackerel can be marinated in a plastic container of suitable size. I find it convenient to use glass jars. So, place part of the onion at the bottom of a clean, dry jar.

Next, make another layer with onions, then with fish. And so on to the very top of the jar.

Pour the cooled marinade over the fish up to the neck. Cover with nylon or iron screw caps and refrigerate for at least two days.

Marinated mackerel is very tasty as a stand-alone snack or a great addition to boiled potatoes.
