Wash the eggplants and dry. Cut off the tails. Cut the eggplants lengthwise into long slices about 5mm thick. Take eggplant that is dense, not limp, with elastic, shiny skin.

Sprinkle the eggplants with salt, place in a bowl and leave for 20 minutes. Then wipe off the salt with napkins. This is necessary to remove the bitterness from vegetables.
