Carrot 100 g
Vegetable oil 40 ml
Honey mushrooms (the weight of boiled mushrooms is indicated) 500 g

How to deliciously fry wild mushrooms? The first step is to collect mushrooms in the forest. Autumn honey mushrooms have a brownish color, a scaly cap and a skirt on a leg. The collected mushrooms have a pleasant, mushroom smell. If you can’t get into the forest, then buy honey mushrooms in a store or market. You can also use frozen mushrooms for this recipe.

To prepare this dish, I usually take medium-sized mushrooms with an open cap. I prefer to pickle the smaller mushrooms for the winter.

Cut off the stems of honey mushrooms, leaving only the caps. If you are using young mushrooms, leave them whole. Their leg is dense, elastic and very tasty, unlike those honey mushrooms that are larger. Remove forest debris, needles, etc. from the hats. Place in a colander with large holes and rinse well under running water.

Place the mushrooms in a saucepan, cover with cold water, lightly salt and place on the stove. After boiling, reduce the heat to medium and simmer for 30 minutes until tender. During and after boiling, foam will form; remove it with a large spoon. I weighed the mushrooms only after cooking, so I indicated the weight of the boiled mushrooms in the ingredients.

Drain the finished honey mushrooms again in a colander and rinse thoroughly again under cold running water.

Peel the onions, carrots and garlic, rinse the vegetables. Grate the carrots on a coarse grater, cut the onion into half circles or a little smaller, and chop the garlic finely or pass through a press. Pour vegetable oil into a frying pan with a thick bottom; you can reduce the amount slightly. Place the boiled mushroom caps and chopped vegetables into the pan.

Add salt and allspice to taste. My carrots werenʼt very sweet, so I added a little less than half a teaspoon of sugar. Salt and pepper needed 0.5 tsp each. Mix everything thoroughly. Once the oil is hot and the contents of the pan begin to fry, reduce the heat to medium and cook the mushrooms until cooked (stir occasionally). Choose the degree of frying for yourself, I cooked for about 15 minutes.
